Introduction

Indonesian uh...The rest is here , but a sandwich was not the most common thing in my lunch box and the unique and fragrant indonesian sweet kecap manis bomb chili sauce and zesty pickles each more delicious than the rest was a common thing that i am used to. This Roasted Ciabatta Sub is like a the most delicious dream that i have where i smoosh my fondest memories and an italian roll. And even in an italian roll their ki- Wa Wa Wow with the sipped veggies , it tastes better. This dish is heaven.
It has gained so much popularity over the week that it has become a weekend favorite.
Preparing any easy heavenly food at home is also a breeze. this Roasted Ciabatta Recipe is so easy, you don't even have to have certain tools to make it! The even greater thing is that it works for any situation. you can make it as a picnic snack, needing to reheat for a quick lunch, or to show off to friends or yourself!

ingredients(Serves 4)

For The Marinade and Protein

- 600g (1.3 lbs) boneless chicken breast or thighs
- 60ml black sweet soy sauce (kecap manis) or a combination of soy sauce and brown sugar for a quick alternative
- 30ml soy sauce (2 tbs)
- 15ml lime juice (1 tbs)
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbs (15ml) sambal oelek or sriracha
- 1 tsp ground coriander
- 15ml olive oil,salt and black pepper to taste

Sambal Mayo

- 120g (1/2 c) mayonnaise
- 1-2 tbs sambal oelek or sriracha to taste (15-30 ml)
- 1 tsp lime juice

Quick Pickles (Acar Style)

- 120ml rice vinegar (1/2 c)
- 1 tbsp sugar (15g)- ½ tsp salt
- 1 small cucumber, sliced thin
- 1 medium carrot, julienned

Assembly and Extras

- 4 ciabatta rolls (or sub rolls), about 200 - 250 g total (7 - 9 oz each)
- 2 tbsp butter or olive oil to toast sticks
- Lettuce or fresh herbs (cilantro or basil)
- Optional fried shallots or thinly sliced and fried red onion
- Optional sliced cheese

How to make Roasted Ciabatta Sub(Indonesian): Preparation Steps

Marinate the Chicken

In a bowl, combine the liquid ingredients and the spices in the order of kecap manis, soy sauce, lime juice, garlic, ginger, sambal, coriander, olive oil, salt, and pepper.
Add the chicken bites and marinade to coat, it is best if it is left to sit in the fridge for at least 30 minutes (or overnight for some serious flavor)

Preheat the Oven Then Put the Baking Tray in the Oven

You need to crank the oven up to 400 degrees Fahrenheit. Then take a tray and line it with parchment paper and drizzle some oil on it.

Remove the Chicken From the Water to Begin Roasting

Place the marinated chicken in the oven once the time is set. Observe the time frame of about 20 to 25 minutes. Chicken pieces would be considered done when fully white and slightly brown at the edges. While the chicken is cooking, the internal thermometer should read at least 165 degrees Fahrenheit.
