Ingredients

-Cold water or chilled milk: 240–360 ml (1–1.5 cups) — adjust to desired thickness
-Fresh lemon juice: 2 tbsp (30 ml) — approximately 1 medium lemon
-Lemon zest (optional): 1 tsp (2–3 g)
-Roasted cumin powder: 1 tsp (5 g) — or use toasted, freshly ground cumin seeds.
-Salt: ½–1 tsp (2.5–5 g) — or to taste
-Black pepper: a pinch or to taste
-Fresh cilantro (coriander) or mint, chopped: 2 tbsp (10 g) — optional
-Green chili (optional): ½ small, finely chopped — for a gentle kick
-Ice cubes, to serve

Preparation Steps

-Whisk the yogurt
Take a medium-sized bowl and add the yogurt. Start whisking it and note, it has to be in a smooth and frothy texture. This is to remove lumps and give the Lassi a whipped smooth consistency.
-Add lemon and seasonings

To achieve a frothy café style presentation, blend the mixture on low for 10-20 seconds. If a slushie type drink is desired, add a few ice cubes.
-Adjust and chill
Taste and incorporate more salt, lemon, or cumin as desired. If chilis or fresh herbs are meant to be added, this is the time to fold them into the mixture. Chill for 10-15 minutes to let the flavors combine, or immediately pour over pour ice to serve.
-Garnish and serve
Pour into tall glasses. Sprinkle some roasted cumin and chopped cilantro or mint, then for a finishing touch place a lemon wheel on the rim.

Tips & Variations 

-The yogurt can be swapped for thick, soy or coconut yogurt and the lassi can be made a vegan recipe by simply processing the yogurt with coconut water for a refreshing Easy Savory Lemon Lassi.
-For a spicier version, add some crushed roasted cumin and a touch of chaat masala.
