Ingredients

-500 ml plain full fat yogurt (approx. 2 cups) Use Greek yogurt for thicker texture.
-120 ml cold milk (approx. 0.5 cups) Adjust for desired thickness.

-Zest from 1 orange.
-2-3 tbsp sugar, or, honey. Adjust to taste ( ~25 to 45 g 1.5 to 3 tbsp ).
-1/4 tsp ground cardamom or, 2-3 crushed green cardamom pods.
-6-8 ice cubes (optional, for extra chill).
-a pinch of salt (enhance flavor).
For the sizzling syrup:
-2 tbsp unsalted butter or ghee (30 g).
-1 tbsp orange juice and 1 tsp orange zest (from above).
-a pinch of chili flakes or smoked paprika (optional, for a warm twist).
-Garnish: slim orange slices, a couple mint leaves, and a couple saffron strands (optional)

Preparation Steps

-Pop your glasses upside down into the fridge for 10–15 minutes. A cold glass helps keep the spicy lassi frosty longer.
-In a blender, combine yogurt, cold milk, orange juice, orange zest, sugar or honey, cardamom, and a pinch of salt.
-Blend to a smooth and frothy consistency. Approximately 20 to 30 seconds should suffice.
